Ultimate Meatballs

I love meatballs!  I like them with my favorite marinara sauce, on spaghetti squash or even just heat one up for a quick snack on-the-go.  These are chock full of protein and veggies so they are a perfect big or mini meal!

Ingredients

  • 1 pound ground beef
  • 1/3 cup almond meal
  • 2 large eggs
  • 4 oz baby bella mushrooms
  • 1 stalk of celery
  • 1 carrot, peeled and roughly chopped
  • bunch of scallions, the bottom third (the onion portion and a section of the greens)
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon cinnamon
  • 1.5 cups of marinara (heated and reserved for plating)
  • 2 tablespoons fresh, chopped basil for garnish

Directions

  1. Preheat oven to 350 degrees.
  2. In a food processor, blend bellas, carrot, celery and scallions until finely chopped.
  3. In a bowl, mix ground beef, ingredients from the food processor, eggs and remaining seasonings.  Use your hands (or a spoon) to thoroughly mix ingredients so they are completely distributed.
  4. Using an ice cream scooper, scoop a ball of meat mixture (12 meatballs total) and place each one in a large, greased baking pan.
  5. Cook for approximately 45 minutes.
  6. Plate and spoon marinara sauce over meatballs. Garnish with chopped fresh basil. Serve.
  7. Enjoy!

  2. Hey Cavegirl, Meatballs – I luv um. I have a whole card file just on meatballs (and meatloaf). So I'm gonna try your recipe this weekend. It looks great and will probably move near the front of my file. One question though: Why the almond meal? Replacement for bread crumbs? Parmesan? Texture? Taste? Thanks, BobT

  3. The cinnamon is throwing me off?? I like cinnamon but not crazy about it in meat dishes. Can you taste it?? I think I will leave it out.

  4. I have made meatballs/burgers without ground almonds and they have worked out just fine and dandy!! :D These do sound pretty delicious!!!!!!!! Of course doesn't everything from Cavegirl!! ;0

  5. I'm new to Paleo eating. What is the difference between Almond Meal and Almond Flour? I have a bag of blanched whole almonds at home. How could I make my own almond meal?

    • There is no difference…sometimes almond flour is maybe a little bit finer, but basically the terms are interchangable. I always make my own meal/flour out of raw, unsalted almonds ~ your blanced almonds would be perfect. Just put them in a food processor (or blender) and blend until fine. Just make sure not to blend for too long, otherwise, you will create almond butter! :-) Hope this helps!
