I have just started using my grinder attachment and I originally bought some chicken to make sausage, but thought that with the Memorial Day weekend coming up, that sliders would be a better choice. These are juicy, flavorful and the smokiness of the bacon brings it home!

1 lb chicken breasts, cubed
6 oz applewood smoked bacon, uncured, chopped into 1-inch sections
1/2 onion, finely chopped
1/2 tsp sea salt
1/2 tsp ground lemongrass
1/2 tsp garlic powder
Through the thicker grinder attachment, alternate the chicken and bacon until all is ground. Add the remaining ingredients.
With your hands (or a spoon), blend until all ingredients are fully distributed. Refrigerate at least one hour up to overnight so that the spices can come to life.
Using an ice-cream scooper, form balls with the meat mixture (about the size of a golf ball). Press balls down to form your sliders. Either on the grill or a grill pan, cook sliders until desired doneness.
