Chunky Chocolate Cookies

Just chunky goodness if you are craving something sweet!

Ingredients

  • 3/4 cup almond meal
  • 1/4 cup coconut flour
  • 1 cup chopped pecans
  • 1/4 cup raw honey
  • 3 ounces dark chocolate chunks (72% or higher)
  • 1 organic egg
  • 1 teaspoon baking powder

Directions

  1. Preheat oven to 350 degrees.
  2. Blend all ingredients until honey is well distributed.
  3. Place small scoops of batter (about 2 teaspoons each) on a parchment paper-lined cookie sheet…leaving about 1-inch between cookies. Smoosh each cookie down slightly. Cook for approximately 10 minutes.
  4. These cookies are crumbly when they first get out of the oven. Let them cool for about an hour to give them time to set.
  5. Enjoy!

    Best healthy cookies I have ever had. I left out the extra nuts- (only to decrease calories), and added a Tbsp flax meal and dash of cinnamon! Frickin fantastic :) thanks!

  7. These were excellent. I modified and added some vanilla extract, and unsweetened shaved coconut. I also felt like they needed a little fat, first time I made them I added a little almond oil, second time was coconut oil. Both came out great.
    Another variation based loosley around this was Instead of chocolate, I used chopped dates and added some date sugar and a little less honey…..fantastic.
