My mom used to make this all time for us when I was growing up. I haven’t had it in years…it’s funny how tastes and smells can take you back in time. This is a super simple yummy side salad. Prepare the night before, as this is much better once it has had time to “pickle”.
1 cucumber, peeled and thinly sliced
1/2 onion, sliced
1 cup apple cider vinegar
1 cup water
Sea salt and ground pepper to taste.
Put all ingredients in a bowl. Cover. Refrigerate. Enjoy!
