With the Paleo lifestyle, I’ve learned to try “new” grocery items…to stretch my boundaries from chicken, steak and turkey…from apples, bananas and peaches. We tend to keep buying the same things over and over. What my new lifestyle, as well as this blog, has encouraged me to do is to stretch a little…to buy things that I normally wouldn’t choose. Plus, with the internet available, why not?! I come home with a new ingredient and Google my possibilities. Once I’ve done this, I put my spin on it…pick my favorite spices among the variety of Googled recipes and come up with my own flavor ~ or deal with what I have available in my kitchen. Of course I didn’t invent lamb kebabs or mint pesto; but this is my spin on it today…and, by the way, this was a hit with my girls (which is always a feather in my hat when I get both of them to try something new and actually like it!).
Lamb Kebabs:
1 lb fresh ground lamb
1 cup chopped parsley
1 egg
lemon juice, 1/2 of a squeezed lemon
1/4 medium onion, minced
1T raw honey
1/2 tsp ground black pepper
1/2 tsp ground coriander
1/2 tsp paprika
1/2 tsp ground celery seed
6 skewers
Mint Pesto:
1 cup mint leaves
1 cup parsley
1/4 medium onion
1/3 cup pine nuts
2 garlic cloves
5T olive oil
1 tsp lemon zest
1 tsp sea salt
In a food processor, combine all of the mint pesto ingredients. Blend until smooth. Refrigerate.
In a bowl, combine all ingredients for the kebabs. Divide the mixture into six sections and form each section around the skewers. Grill until cooked (about 2 minutes per side…there are four sides to a kebab).
