Choco-Hazelnut Paleo Cereal

This is a slight variation on my Honey Bunches of Paleo Cereal.  I changed the sweetener from honey to high-quality maple syrup, changed the nuts from walnuts to hazelnuts and added a little cocoa powder (I love chocolate and hazelnuts together!).

1 cup unsalted sunflower seeds
1 cup unsweetened coconut flakes
1 cup unsalted hazelnuts, roughly chopped
1/3 cup unsweetened cocoa powder
1/4 cup dried unsweetened cherries, chopped
2T raw almond butter
1/4 cup pure maple syrup
1/4 cup coconut flour
coconut oil, enough to grease the pan

Pre-heat oven to 350 degrees.  Grease a 9×13 pan with coconut oil.

Place ingredients in a bowl and mix until blended well.  Press mixture evenly into pan.  Bake for 15-20 minutes until browned.  Let cool for 30 minutes.  Crumble into an airtight container until ready to serve.  I pour unsweetened coconut milk over the cereal but feel free to use whatever fits with your dietary needs or taste preference.  Enjoy!

Variation:  Without milk, this is also great for a car snack or a pick-me-up during a weekend hike!

  2. I made this and it seemed really dry putting it into the pan to bake…should it be a fairly dry consistency?

      The maple syrup and the almond butter should make it a little "wet"…but it's not sticky enough to make bars, per se. You just want to spread it in a pan to cook in the flavors. Once cooled, it should crumble into pieces similar to granola.

  3. My kids have been missing cereal and thought this looked yummy, but they eat a lot of cereal, so I changed a couple of things to make it a bit cheaper. Instead of hazelnuts, I used almonds, dates replaced the cherries, applesauce for sweetness in lieu of maple syrup, and almond meal for the coconut flour. They said it i the best cereal they ever ate.

  5. Ever since I changed/cleaned up my diet… I've been craving things I never ate before e.g., fruit, nuts, granola, and cereal and yes, fresh, quality ingredients make a world of difference. Made this today subbing what I had (almonds/dates) while awaiting my Nuts.com order.

    Could barely wait for it to cool (okay technically I didn't) and just had a bowl w/unsweetened vanilla almond milk and this rocks!!! Holy wow… I don't miss oats/wheat at all and much prefer to get straight to the good stuff anyway so this is perfect. Thank you so much for this recipe… I can't wait to try the other 2 and tweak away ;)

  7. This would be okay without the cocoa, right? I can't bring myself to eat chocolate in the morning… and I love chocolate!

  8. I am allergic to nuts.. Would Sunbutter be a good substitute for Peanut butter? Also, what else can I add besides Hazelnuts that wouldn't make it too sweet… I was thinking Pumpkin Seeds… Any suggestions???

    • Actually, both of those substitutions sound great…please let me know how it turns out! When using the sunflower seed butter, don't be surprised if it turns green. When that type of butter is heated a chemical reaction occurs.

  9. Yuuuuuuuum! I came back here JUST to comment, which I rarely do. Cereal has been one of my most missed foods since going paleo, so I thought I'd give this a shot–glad I did! I added a little salt (love sweet/salty), and maybe *accidentally* added a little extra maple syrup. Didn't have dried cherries (the store I was at didn't have one.single.bag. without tons of added sugar), but I just ate it with coconut milk and fresh blueberries. I'm in love.

    Next time, think I'll try making it in the crockpot–having the oven on in a Texas summer is crazy-talk. If you haven't tried it, definitely do. Just mix everything in pot, then leave it to sit for a few hours. Make sure to prop the lid open with a wooden spoon or something so moisture can escape. Let it cool/harden and voila!

    • Yay!!! I have two other cereal recipes for you to try also! Trader Joe's is the only place I can find unsweetened dried cherries. Maybe you can order some off of Amazon in the winter when you can't get fresh blueberries? Thanks for the wonderful comment and have a great day! :-)
